Chef Monica SalloutiChef Sallouti’s lifelong passion for delicious nutritious food comes from both her formal training and time spent in the kitchens of her two grandmothers as a young girl. Her Lebanese grandmother lived with her family in São Paulo, Brazil, where family dinners were spiced with multi-cultural creativity and love. Her California grandmother was here in Sonoma County where she owned and managed a health food store in Petaluma for 20 years. Each grandmother, in her own way, taught the importance of using the freshest ingredients to achieve nutritious, soul-satisfying dishes that are prepared with love and care. Chef Sallouti keeps photos of her grandmothers in her kitchen as a reminder that cooking is an act of love no matter how busy life gets. Chef Sallouti honed her culinary skills and nutritional education at the Holistic Nutrition and Culinary Arts program at Bauman College in Penngrove, CA. The Bauman Culinary program specializes in cooking with whole, organic and seasonal foods to support a range of specific nutritional needs. In spite of her passion for food instilled through her family and her culinary education, the specialty of nutrition for Chef Sallouti was sparked after a health crisis some 19 years ago. In her late 20’s, she was diagnosed with metastatic melanoma. As part of her “treatment,” she developed a keen awareness of the inextricable link between food, cooking and health. Now, 19+ years later, Sallouti brings her knowledge, culinary creativity and care to both her clients and our readers. I am thrilled to share what she knows with you. I admit that I have been very fortunate to eat many of Chef Sallouti’s nutritious dishes. They are a combination of classic favorites, fun exotics and lots of “comfort foods.” Each bite is packed with nutritional content that builds vitality while taste buds hum with delight.
